About
Celebrate the incredible range of fabulous food available in the Cotswolds while enjoying unrivalled personal access to an 18th century former village pub in this lovely, personal, half day experience.
You’ll join local chef Kathy Slack at her beautiful 18th century Cotswold-stone house that used to be the village pub and, after tea, coffee and cake you’ll start learning all the tips of her trade.
Sitting around her kitchen island, Kathy will demonstrate 3 to 4 different dishes, all inspired by the produce from her own kitchen garden and local producers.
There’s plenty of opportunity to get hands-on with the cooking for those that would like and ask questions as we go along. Around 2 hours into the class guests move into the dining room, overlooking our historic village green and are served the dishes cooked as lunch with a glass of wine. At the end, guests leave with a recipe pack from the day and lots of inspiration.
Menus are determined by what’s in season in the veg patch. Kathy champions local, seasonal, organic food, so you’ll find the dishes you cook are ingredient-led and simple to recreate. No foams or tuilles, just delicious, home-grown ingredients from the allotment.
Here’s an example menu from an early autumn class:
Leek puff pastry tart
Bibury trout, red cabbage, celeriac & pear remoulade
Nettle & herby goats cheese tortellini
White chocolate panna cotta with preserved summer berries
