George Seagroatt, a well-known Cotswold Chef, heads up the kitchen and insists on ingredients with excellent local provenance.
Among his signature dishes are his home smoked Bibury trout, duck leg terrine with clementines and cranberries, hake with a butterbean, mussel and chorizo cassoulet and a Portuguese fish stew for two.
His white chocolate and passion fruit cheesecake is a huge local favourite.
